In my experience, the flat curves are not very good, if the car is going too fast, forward momentum makes it fly off the track, too slow and the curve slows the car down so much it wont make it out of the corner. Bu instead of hogging out the material maybe you could cut out curves of material that is the final 'pavement' thickness, and the sides would be separate pieces with a groove on the bottom for the pavement. When you’re taking twists and turns at crazy speeds, it can be tricky to keep your car on the track.
